Air Fryer Chicken Thighs

The most forgiving thing you can air fry: bone-in thighs stay juicy across a 20-degree window while the skin goes shatteringly crisp. No flip, no fuss.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp neutral oil

Steps

  1. Dry and season. Pat thighs dry — moisture steams skin. Rub with oil and seasonings, lifting the skin to season underneath.
  2. Skin up, spaced out, 380°F, 14 minutes. Air space between thighs matters more than exact temp.
  3. Finish 8–10 minutes. Cook to 175–190°F internal — thighs are juicier well past the 165°F safety line as connective tissue renders.
  4. Rest 5 minutes. Skin stays crisp; juices redistribute.

Why thighs beat breasts here

Breasts go from perfect to dry inside a 5-degree window; thighs are sublime from 170°F to 195°F. For weeknight cooking — distracted, multitasking, kid-interrupted — that forgiveness is the whole game. Save breasts for brining weekends.

Boneless variation

Boneless skinless thighs: same seasoning, 380°F for 14–16 minutes with one flip, pull at 175°F. Slightly less crisp without skin, same juiciness, faster.

Temp, not time: thigh thickness varies wildly. A $15 thermometer pays for itself the first time it saves dinner — 175°F minimum here, 185°F ideal.
